Creamy polenta with roasted veggies

  • IMG_45024 c water
  • 1 c polenta
  • 2 zucchini
  • 2 plum tomatoes (about 1 c)
  • 3 carrots
  • 1 c mushrooms
  • 2 c spinach
  • 2 cloves garlic
  • 1/4 c olive oil
  • 1 t dill
  • 1 T basil
  • black pepper

Dice veggies except for spinach.  Mince garlic.  Toss veggies in oil, seasonings, and garlic.

Bake for 25 min at 350*

In meantime, boil 4 c water.  Once boiling, reduce heat and add polenta.  Cook for 5 minutes then set aside.

Once veggies are done, add to polenta and add spinach.  Stir and let sit for a few minutes before serving.
